For Valentine's Day this year, I wanted to whip up an easy and festive cookie that would be perfect for the day of love!

To me, the quintessential Valentine's Day candy is chocolate strawberry cream filled hearts. To be honest, after all the holiday baking I did at Christmas, I really just wanted to create something quick and EASY! So, I knew that a strawberry cake mix crinkle cookie was the way to go.

STEP ONE: To make the cookies mix together the strawberry cake mix, oil and eggs until well combined and refrigerate the dough for 30 minutes to 1 hour.

STEP TWO: Prepare a baking sheet with parchment paper and scoop out the dough with a small cookie scoop and roll into a ball.
STEP THREE: Place some powdered sugar in a bowl. Roll the balls in the powdered sugar and place 2 inches apart on the cookies sheet.

STEP FOUR: Bake at 350° for 8-10 minutes. Let the cookies cool slightly before pressing in the chocolate heart.

Here is a tip for perfectly round cookies: take a round cookie cutter and shake/shape them into place right out of the oven.
