It was a great day when I discovered cake mix cookies. For Valentine's Day last year, I made these cake mix Valentine's Day Strawberry Cream Cookies and they were so delicious it looks like I created a new tradition. I wanted to whip up a different Valentine's Day cake mix cookie recipe for this year, and they turned out so yummy and pretty!!!
Here is what you need to make these:
1 box white cake mix
1/3 cup oil
2 eggs
1/4 cup flour
1 teaspoon almond extract
1 bowl of sugar (for dipping)
chocolate cherry cordial kisses
pink gel coloring
optional:
pink candy melts
STEP ONE: To make the cookies mix together the white cake mix, oil, flour, eggs, almond extract and pink gel color until well combined and refrigerate the dough for 20-30 minutes.
STEP TWO: Prepare a baking sheet with parchment paper and scoop out the dough with a tablespoon and roll into 1 inch ball.
STEP THREE: Place some granulated sugar in a bowl. Roll the balls in the powdered sugar and place 2 inches apart on the cookies sheet.
STEP FOUR: Bake at 350° for 8-10 minutes. Drizzle with pink candy melts. Press in the chocolate kisses.
These cake mix cookies have the BEST texture.
These are so easy to make that they are perfect to make with kids for a fun Valentine's Day baking project!
Here is a tip for perfectly round cookies: take a round cookie cutter and shake/shape them into place right out of the oven.
