Easy Lemonade Cupcakes

It's almost summer! Obviously, that calls for anything and everything totally refreshing. Enter my easy lemonade cupcakes with creamy lemon buttercream frosting. These are perfect for any summer get together and would be perfectly cute for a lemonade stand themed birthday party.

To make these extra cute I used:

• Paper Straws

• Boston Fruit Slices

• Graffiti Rainbow Crispies

For piping I used:

• Wilton tip #12 9

• Wilton tip #2D

These cupcakes are so easy because they use a yellow box mix! I added some extra ingredients and swapped some to make these taste bakery style, light and fluffy with a hint of lemon that doesn't overpower. The buttercream gives the cupcakes the extra lemony kick they need. My secret to rich and delish buttercream is to use Land O' Lakes SALTED butter. *gasp* After lots of experimenting, I found that using salted butter really improves the flavor and richness of the buttercream. I totally prefer it, however, use unsalted if you would rather!
